Been busy getting the raised beds up and going. We ate our first salad this week from them. Wonderful taste! Jeff opened the beehive in the pasture yesterday and they have a little honey! Will need to add a super in a week. And will check on the ones in Coldspring later today. Along with the other 2 cows that are due to calve at any moment! Have another batch of eggs in the incubator, the last ones were rotten 😲, 12 of these are green eggs , so hoping for a good hatch. Borrowed an egg turner this time and it sure makes it easier to do! Also have made a trip to the beach, but it's so wet that it's hard to enjoy yourselves . Planning to get the porch built and dirt hauled in soon. Well need to get busy, hopefully will catch up quicker in the next week!</div>

Started out making spicy, hot ketchup for the first time. It was fun to make and not too much trouble; will make it again this summer when our garden veggies are ripe. Have a little over $8 in it, so not too bad for 5 pints. I couldn't stand to throw the thick paste looking leftovers out, so I canned them up for tomato paste. But this stuff is HOT; might leave the habanero peppers out next time?<br />

Been a busy week around here. The girls went back to school, I've been working on taxes, and just various other farm chores. We went up and banded Little Red's bull calf yesterday and wormed Maggie (our milk cow). She's been looking a little rough lately, so thought we'd give her an extra dose of wormer.<br />

Started working on another baby quilt today. Hopefully I've got enough squares cut out; it just seems to take me forever to get them cut out and almost no time to sew them up.<br />

We usually start the tomato seeds and a few others right after the first of the year. Decided this year to wait a little longer on some of the warm weather crops like the cucumbers and squash. I planted 48 cells of tomatoes: Big Red, Amish Paste, Pink Brandywine, Mortgage Lifter, Roma, and Abe Lincoln. Each cell has 2-3 seeds and when they get 3-4 leaves, I'll separate them up into individual cells. I can't stand the thought of just snipping the extras off, so I give each of them their own pot to grow in! Praying God will bless us with loads of tomatoes this year!</div>

We had a really blessed evening with our friends Leslie and Brent. Jeff made homemeade chicken and dumplings, yeast rolls and cinnamon rolls. Brent bought LOTS of fireworks for the grandkids and they enjoyed shooting them off so much! Roxie on the other hand, didn't like them one bit, poor baby.<br />

Our youngest daughter and her girls moved in with us yesterday until her husband is able to find them a place to live. So our household doubled in size overnight. We are blessed to have them here even if only for a little while.<br />

The flip side- it looks to me like cooked ground meat. I try to scrape as much of it off as I can, then put it back in the pot to heat again, watching very closely due to it being just straight wax this time.</div>

When I think back, I guess the biggest change in our lives is that we were able to move back home a little over two years ago. So glad to be out of our camper after five years and very thankful to God that my mom is well enough that we don't need to be there on site! And a little over a year ago we purchased 2 lots in High Island, Texas just over a minute from the beach!! So we are living a dual lifestyle - farmers and beach bums. We love it!! So I'll be posting farm and beach photos from time to time.</div>

So back to today..... Jeff's been at the wood splitter quite a bit today. We were given a huge tree from an Aunt and him and Jordan have been working on getting it split up and ready for the wood heater. I worked on getting the Christmas tree and decorations down and packed away. I know, lots of people keep theirs up until after New Year's, but it was time for it to be put away. I set up the incubator yesterday and put 16 eggs in it this morning. Our hatch rate was pretty good last year, so figured I'd give it another shot. Plans are to get these hatched in 21 days and then maybe set another dozen or so in to hatch in February.</div>

We are expecting a cold front over night which we really are looking forward to. It's been warm here, I even have a few Spring bulbs blooming. I always try to get our tomato plants started around the first of the year. Don't know yet how many we are going to try to grow this year. We both are having lots of trouble with our backs, but the tomatoes did better than anything else last year. Also started the sweet potato slips today, usually start them around Thanksgiving but totally forgot about them this year. Hopefully they will catch up and grow alright.</div>

Next, place your crackers on a parchment lined cookie sheet. They won't rise, so you can place them close together. With a fork, prick each cracker-I put a "Y" in each of mine! Sprinkle salt on the tops and lightly press it in.</div>

We decided to try our hand at meat birds this fall-they have NOT grown off as quickly as we were told. Thought we would have them butchered and in the freezer by Christmas, but they are still a little small. Jeff always buys whole chickens from the grocery store and the last one we bought was totally blood shot all the way through-GROSS! So we made the decision to try to raise some ourselves.</div>

And this is Rusty-our new bull. Long story short-we've had an awful year with the cows. We were depending on the bull across the fence to service all the cows, and apparently-he's no good. We took two of the cows to the vet in September to have them checked-they weren't bred. :( We were waiting on the milk cow to calve in October-no calf again-took her to the vet and she wasn't bred either! We were really bummed out! Cost us over $4000 in possible income from the sale of calves this fall! We borrowed a friends Jersey bull and got 4 of the cows bred-took 1 over to another bull. So now we are looking for calves starting in August/September.</div>

We are still living in our camper and trying to take care of mom and Shorty. Both are doing we at the moment-Mom had back surgery in October. Jeff's just getting over the flu-really laid him low for a few days.</div>

I started making soap and it's really going good. I have a few customers and the reviews are good. Really do wish I had some fresh milk to use again, though.</div>

The sow wasn't bred, either. But the young sow is due to have her first litter in a few days, so we are keeping our fingers crossed for a good healthy litter. Jeff's bees have done just awesome this year and we harvested 100 pints of honey at the last total! Can't wait for warm weather again to start working them! And to get started on the garden. I plan to start some seeds in the greenhouse tomorrow-oh that's another accomplishment-Jeff built us a greenhouse, so we can get our own seedlings started this year!</div>

And I resigned from my job in November. We had worked pretty hard for the last 2 years to get our bills paid down and get about as debt-free as possible, so it was time for me to get to stay home. It also will help take some of the strain off of Jeff-since he's been handling everything.</div>

We had a very wonderful Christmas-all the kids and grandkids got to come by at some point during the day! And we are going to be grandparents again! Randy and Casey are expecting a little girl in March!</div>

My favorite Milk Man!! lol After weaning Little Bit, Jeff started getting 4 gallons a day of milk. We have a really good customer that comes out every other week and buys milk and eggs from us. But about a month ago, we began drying Lady up so she could have a rest before her next calf is born in mid September. It also gave us a chance to get away for a couple of vacations this summer-more details later!</div>

OK-on to our next major project this year-bees! Jeff has been very busy with our hives. We've lost a few-the stump hive at the house is gone. He has gotten the chance to capture several wild hives with some success! The second one is actually doing quite well at the moment-have had it a few weeks. Numbers 3 and 4 didn't stay in the hives-but we also left the next day on vacation, so we weren't home to tend to them. Number 5 seems to be doing good-we have had it a week today, and Jeff is in the woods now trying to capture yet another! FREE BEES! The best kind! The hive in the picture above is the one we bought in Huntsville last year and it is doing great. We've robbed honey from it once already this year!</div>

This is one of the most awesome things we have seen this summer. The honey bees will come to the magnolia blooms and knock off the "matches" and they land in the blossoms. Then they walk around in them, collecting all the pollen, then fly back to the hive!</div>

Ok-back to the vacation stuff! We took a trip to Fredericksburg week before last with our friends, Sheila and Alfred. We had such a wonderful time. We went to Luckenbach one morning and spent quite a lot of time seeing the area and watching the deer. We stayed on a 360 acre ranch in a cute little house called Among the Crepe Myrtles.</div>

It is so beautiful outside! Snow changes the appearance of the landscape so drastically! It's like God washes everything sparkling white! Just like He does us if we only ask! We so seldom get snow-usually ice-but the ice is under the snow and our temps here will most likely not get above freezing all day-so it might stay all day before melting. They closed school today-so looks like I'll get some time to work on the income taxes-yuck-but it needs to get done. We decided to go ahead and butcher the last of the Dexter's we had. Cocoa had become a little aggressive and seemed to know how to use those sharp, little horns. She also seemed to be having trouble carrying a calf-she'd been bred twice that we knew of and no calf. So with the extremely cold weather we had on Monday-Jeff went ahead and put her down. It was so cold-he just skinned her out and left the carcass hanging high in a tree outside of the camper overnight. </div>

Jeff got all the steaks packaged on Thursday. We had burgers for supper on Wednesday-they were delicious! But the steaks he grilled for us and Sheila and Alfred last night were AWESOME!! So tender and full of flavor. And so healthy!</div>

We had a wonderful Christmas this year again! Time is just slipping by so fast, I'm having a really hard time keeping up. We've been home since the weekend before Thanksgiving, but will be moving lock, stock and milk cow back to Coldspring in the next couple of days. We had planned to go yesterday, but had to attend the funeral of Jeff's cousin's daughter, Willie Marrie, who passed away on Friday after a two year battle with breast cancer. She was only 32 years old and leaves behind a husband and 3 children-please keep them in your prayers. Ricky also lost his stepdad a week before Christmas-so my break has been taken up with funerals-too sad for this time of year.</div>

We've been thinking alot on the goals we had for this past year-mainly the getting out of debt one. God is so good-we can actually see the light at the end of the tunnel and several of our debts are very close to being paid off! We were able to put a substancial dent in our debt and hopefully the next 6 months will see us free and clear of nearly everything other than my truck note-God willing! The garden did very well and we were able to can and freeze alot of veggies this year. I didn't do a good job at all of keeping track of it here on the blog, but I do have a tally on a calendar in the camper-so I'll get caught up on it in the next few days so I can get started on the income taxes.</div>

We had a calf born weekend before last-about a month early from our calculations-but when we found it-he was in the gully and had been there way too long. He was very weak and limp. We tried to warm him up and get him to nurse-he was too far gone :( He died before midnight. We have another heifer due at the first of the year-hopefully things will go much better this time around! We did borrow a jersey bull from a friend the same weekend and hopefully the milk cow is now bred. We have her and the Dexter at home since we have so much going on here right now and need to be home now instead of in Coldspring. We have several regular milk customers now, but still have an abundance that the pigs enjoy!</div>

And Jeff working his bees-this hive has been down close to the creek all summer and isn't doing very well. We had 2 hives there-but lost one. It hasn't been a good year for the bees in the area :( We haven't harvested much honey at all. Jeff and Shorty tried to capture some wild bees a few weeks ago from a house-we actually thought we had them-queen and all only to realize 2 days later they were gone. I'm sure we will try again. We did buy 1 more established hive from around Huntsville and they are doing great-coming and going loaded down with pollen!</div>

Picture of us on vacation in Arkansas in July. We had been staying at Caddo Lake with Sheila and Alfred and when it was time to go home-we decided we weren't ready to go home-so we drove to Washington State Park for the day.</div>

OK-back to the milk! We are drowning in it! We are selling it for $5.00 a gallon if anyone in the area would like to try some out! Jeff's still milking twice a day-and we've weaned the calf-so we are getting around 4 gallons a day! Sad thing is-we are having to feed it to the pigs and chickens-well, that's not so bad after all-it sure isn't going to waste!</div>

The young pullets have started laying-YEAH! We have 10 of them left-and only 2 from the old flock and are getting anywhere from 4-7 eggs a day. So either some aren't laying yet-or they are taking turns! One is laying a dark green egg-and we are getting a pink one! Most are pretty shades of green and blue. One of the older hens is a Rhode Island Red-so she lays a pretty brown egg.</div>

We've been staying so busy I haven't had time to post and not much time to even take any pictures. I've been working some Saturdays. Church has been keeping us busy. And some of the best news-our daughter Alana is getting married on Nov 23rd! It will be a private small ceremony with a reception at our Church fellowship hall afterwards with BBQ and all the fixins. Her and Ricky have 2 little girls together so we are glad they have finally decided to do the right thing.</div>

I'm still working on mastering the cheese making-I'm not having a lot of success-don't know what I'm doing wrong-but I do have an idea that I'm gonna try next time I get a chance. Jeff is going to make us a cheese press when he gets a chance so we can try our hand at cheddar cheese. He just finished building a new shed to milk in that is connected to the barn, so when it's raining, he doesn't have to carry the milk in the rain. I got a pic of it when he started on it-just gotta get down there for a pic of the finished shed-along with the concrete slab! Hopefully it won't take me 2 months to get back to posting!</div>
